                                        Ingredients
- 1 small plain flatbread or pitta bread
- 1 tsp olive oil, plus extra to serve
- a pinch of dried crushed chilli flakes
- 40g mixed salad leaves
- 5-6 cherry tomatoes, halved
- 60g mozzarella pearls or torn mozzarella ball
- 100g pineapple, fresh or from a tin, roughly chopped
- 3 slices Parma ham or cooked ham, roughly torn
- a small handful of basil leaves (optional), roughly torn

Get ahead
Prepare the night before, keeping the croutons in a separate airtight container.
                    - Preheat the grill. Open out the flatbread, brush each side with 1⁄2 teaspoon of oil, and sprinkle with chilli flakes. Grill until crisp, leave to cool, then tear into chunks.
- Put the salad leaves in a lunchbox or bowl. Add the tomatoes, mozzarella, pineapple and ham. Scatter over the basil, drizzle with a little olive oil, if you like, and serve with the chilli croutons.
