Ingredients

  • 1 small plain flatbread or pitta bread
  • 1 tsp olive oil, plus extra to serve
  • a pinch of dried crushed chilli flakes
  • 40g mixed salad leaves
  • 5-6 cherry tomatoes, halved
  • 60g mozzarella pearls or torn mozzarella ball
  • 100g pineapple, fresh or from a tin, roughly chopped
  • 3 slices Parma ham or cooked ham, roughly torn
  • a small handful of basil leaves (optional), roughly torn

Step by step

Get ahead
Prepare the night before, keeping the croutons in a separate airtight container.
  1. Preheat the grill. Open out the flatbread, brush each side with 1⁄2 teaspoon of oil, and sprinkle with chilli flakes. Grill until crisp, leave to cool, then tear into chunks.
  2. Put the salad leaves in a lunchbox or bowl. Add the tomatoes, mozzarella, pineapple and ham. Scatter over the basil, drizzle with a little olive oil, if you like, and serve with the chilli croutons.
