At his Isle of Skye restaurant Edinbane Lodge, chef Calum Montgomery is giving visitors an authentic taste of the Scottish Highlands.

 In 2017, Calum and his wife, Eilidh, purchased Edinbane Lodge – an old hunting lodge thought to be one of the oldest continuously operated buildings in Skye – and have transformed it into one of the best restaurants on the island, complete with six guest rooms. Edinbane Lodge takes provenance seriously. Calum will look first to Skye, then the wider Scottish Highlands for its produce – and knows all his suppliers, from the fishermen to the forager, well beyond first names. The menu even advertises the distance that each ingredient has travelled to be on a plate. More than anything, keeping the produce local helps give that genuine taste of the surrounding area.

‘One of our biggest competitors is actually the landscapes,’ he grins. ‘Because people are coming to Skye for the views. They want to see the Cuillin Hills, they want to see the Quiraing, the fairy pools, the Skye bridge, but I want them to leave with a lasting memory not just of what the place looks like but how it tastes as well.’
