Ingredients

  • 600g ripe tomatoes
  • 2 medium carrots, peeled and shredded or grated
  • 1 red chilli, deseeded (if desired) and finely chopped
  • 25g toasted pine nuts
  • 50g large juicy raisins
  • 3 tbsp extra-virgin olive oil
  • 2 tbsp sherry vinegar

Step by step

Get ahead
Make a few hours ahead; cover and chill.
  1. Halve the tomatoes and put them into a large serving bowl. Add the carrots, chilli, pine nuts and raisins; toss well.
  2. Mix the extra-virgin olive oil with the sherry vinegar and a pinch of salt and good grinding of pepper. Pour into the salad mix and toss again. Set aside for about 15 minutes to allow all the flavours to develop before serving.
