Ingredients
- 6 slices Ernest white sourdough
- ½ x 220g pack smoked streaky bacon
- 4 tbsp mayonnaise
- 1 tsp red chili paste
- 1 medium avocado, thinly sliced
- 240g cooked roast chicken breast, sliced
- 4 slices Emmental
- ½ head baby gem lettuce, leaves separated
- 3 large vine tomatoes, sliced

Preheat the oven to 200°C, fan 180°C, gas 6. Arrange the bacon rashers over a baking tray and transfer to the oven to bake until crispy, around 25 minutes, flipping halfway. Meanwhile, mix together the mayonnaise with the chilli paste and some seasoning.

Start building the sandwiches. Begin with some spicy mayo on the bottom slice of sourdough, then some sliced avocado, roast chicken breast slices and the cheese. Top with another slice of sourdough, more spicy mayo, then some lettuce, tomato and crispy bacon rashers. Top with the final piece of sourdough and secure with a toothpick, then slice. Repeat to make a second sandwich.
