Ingredients

  • 175g plain flour
  • 1 tbsp baking powder
  • 1 medium egg
  • 150g condensed milk, plus 50g to serve
  • 150g blueberries
  • vegetable oil, to fry

Step by step

  1. Sift the flour and baking powder into a bowl with a pinch of salt then make a well in the centre.
  2. In a jug, whisk together the egg, 150g condensed milk and 150ml cold water; pour into the bowl of dry ingredients, whisking slowly until everything is combined and the batter is smooth without any lumps. Stir through 100g of the blueberries.
  3. Heat a little oil in a large non-sticking frying pan, over a medium heat. Spoon in a heaped tablespoon of mixture per pancake. Cook until bubbles start to appear and burst on the surface, then flip over and continue to cook until the underside has browned. You can cook 3-4 pancakes at a time depending on the size of your pan. Repeat until all the mixture has been used (you should make 16 pancakes).
  4. Serve in a stack, drizzled with a little extra condensed milk and the rest of the blueberries.
