Ingredients

  • 6 unwaxed lemons
  • 125g granulated sugar
  • 400ml water
  • 350ml vodka
  • 1ltr soda or sparkling water

Step by step

  1. Use a peeler to remove strips of lemon zest, avoiding the white pith. Juice the zested lemons. 
  2. Place the zest, sugar and 400ml water in a saucepan and slowly bring to the boil, stirring to dissolve the sugar. Once boiling, add the lemon juice and remove from the heat.
  3. Cool completely, strain and chill until needed (up to 4 days). In a large jug or pitcher, mix together the lemon syrup, vodka and soda or sparkling water. Thinly slice 2 lemons and add to the jug. Serve in tall glasses filled with ice.
