Ingredients
- 6 unwaxed lemons
- 125g granulated sugar
- 400ml water
- 350ml vodka
- 1ltr soda or sparkling water
Step by step
- Use a peeler to remove strips of lemon zest, avoiding the white pith. Juice the zested lemons.
- Place the zest, sugar and 400ml water in a saucepan and slowly bring to the boil, stirring to dissolve the sugar. Once boiling, add the lemon juice and remove from the heat.
- Cool completely, strain and chill until needed (up to 4 days). In a large jug or pitcher, mix together the lemon syrup, vodka and soda or sparkling water. Thinly slice 2 lemons and add to the jug. Serve in tall glasses filled with ice.
