Ingredients

  • 3 sprigs of mint
  • ½ lime, in 4 wedges
  • 2 tsp demerara sugar
  • 50ml white rum
  • soda water, to top up

Step by step

  1. Pick the mint leaves off the stalks, reserving the top of one sprig to garnish. Add the leaves to the bottom of a tall glass, squeeze in 2 lime wedges, and add them in, along with the sugar. Give everything a good bash with a cocktail muddler or the base of a rolling pin to mix together.
  2. Add the rum, remaining lime wedges, and a large handful of ice, and stir. Top up with soda water and garnish with the mint sprig.
