Mulled apple and Calvados warmer

- 2kg apples, cut into quarters
- 200g caster sugar
- 2 cinnamon sticks, plus extra to use as stirrers
- 200ml Calvados
Make the apple-flavoured base the day before.
- In a large pan, bring the apples, sugar, cinnamon sticks and 2 litres of water to the boil, stirring. Simmer for 30 minutes.
- Strain through muslin or a fine sieve and discard the apples and cinnamon sticks. Pour into the cleaned pan and bring to the boil. Add the Calvados and pour into eight heatproof glasses, each with a cinnamon stick.
Tip Serve with sweet and salted almonds – toast 400g unblanched almonds in a dry frying pan, coat in 2 tablespoons of honey, tip on to nonstick baking paper, sprinkle with 1 tablespoon of sea salt flakes and break up once cooled.
