Ingredients

  • 100ml gin
  • 60ml ginger cordial (we used Belvoir Farm)
  • 30ml freshly squeezed lemon juice (about 1 lemon)
  • ice
  • 300ml pear cider
  • 400ml prosecco*
To serve
  • ripe mini pear, sliced (optional)
  • springs of thyme

Step by step

  1. Pour the gin, ginger cordial and lemon juice into a jug. Stir to combine.

  2. Half-fill four tall glasses with ice, then divide the gin mixture among them. Top up with the pear cider and prosecco. 

  3. Cut slices from a ripe mini pear, if liked, then add a slice or two to each glass, along with a sprig of thyme, and serve. 

    *Check your prosecco is vegetarian/vegan, if required.
