Ingredients
- 100ml gin
- 60ml ginger cordial (we used Belvoir Farm)
- 30ml freshly squeezed lemon juice (about 1 lemon)
- ice
- 300ml pear cider
- 400ml prosecco*
To serve
- ripe mini pear, sliced (optional)
- springs of thyme
Step by step

Pour the gin, ginger cordial and lemon juice into a jug. Stir to combine.

Half-fill four tall glasses with ice, then divide the gin mixture among them. Top up with the pear cider and prosecco.

Cut slices from a ripe mini pear, if liked, then add a slice or two to each glass, along with a sprig of thyme, and serve.
*Check your prosecco is vegetarian/vegan, if required.
