Ingredients

  • 6 St. Ewe Super Eggs, beaten
  • 1 tbsp vegetable oil, plus extra to grease
  • 50g streaky bacon, chopped (approx. 4 rashers)
  • 1 red pepper, chopped
  • 50g mushrooms, chopped
  • 2 spring onions, sliced
  • 100g cheddar cheese, grated
  • 3 large ham slices, chopped
  • 50g radishes, sliced

Step by step

  1. Preheat the oven to 200°C, fan 180°C, gas 6. Grease a 12-hole muffin tray with oil or line with paper cases. Add the oil to a pan over a medium heat, then add the bacon. Cook for 5 minutes or until starting to crisp up, then add the pepper, mushrooms and spring onions. Cook for a further few minutes or until the vegetables have softened. 

  2. Sprinkle some grated cheese into the bottom of each muffin-tin hole or paper case. Evenly spoon the bacon mixture among the holes or cases, then top with the ham and radishes. Season the beaten St. Ewe Super Eggs, then pour evenly into the holes or cases. Transfer to the oven and cook for 20 minutes or until the eggs are set.
