Ingredients

  • 1 tbsp olive oil, plus extra for brushing
  • Small knob of butter
  • 1 large red onion, cut into thin wedges
  • 1 tsp black mustard seeds
  • 2 tsp light soft brown sugar
  • 1 tbsp rice wine vinegar
  • 160g pack The Vegetarian Butcher Little Willies Sausages
  • 1 x half ciabatta, halved lengthways and horizontally
  • small handful salad leaves
  • tomato relish, to serve

Step by step

  1. Heat the oil and butter in a large frying pan over a medium heat. Add the onions and cook for 8-10 minutes, stirring occasionally until softened.
  2. Add the mustard seeds, sugar and vinegar and cook for a further 5-6 minutes, stirring occasionally until very tender and lightly caramelised.
  3. Meanwhile, brush the sausages liberally with the extra oil and cook around the cooler edges of a hot barbecue for 5-6 minutes, turning frequently until lightly charred and heated through. Place the ciabatta bread, cut-side down, on the barbecue for 1-2 minutes until lightly toasted. Alternatively, cook in a preheated cast iron griddle pan.
  4. Fill the toasted ciabatta pieces with the salad leaves, sausages and onions and serve with tomato relish, if liked.
