Ingredients

  • juice of 1 lime
  • large handful of mint leaves
  • 1 tbsp simple sugar syrup (such as Monin)
  • 100ml coconut rum
  • 50ml coconut cream
  • 100ml chilled soda water
To garnish
  • pomegranate seeds
  • mint leaves

Step by step

  1. Half-fill two glasses with ice. Put the lime juice and a large handful of mint leaves in a cocktail shaker and muddle together. 
  2. Add a large handful of ice to the shaker and pour in the sugar syrup, coconut rum and coconut cream. Shake well until very cold, then strain into the glasses. 
  3. Top up with 50ml soda water per glass. Garnish with pomegranate seeds and extra mint.
