Ingredients

  • 100g fresh or frozen cranberries
  • 100g granulated sugar
  • 150ml water
  • ice
  • 100ml gin
  • 3 tbsp lemon juice
  • 300ml champagne (or prosecco)
To garnish
  • twists of lemon peel

Step by step

  1. Put the cranberries, sugar and 150ml of water in a saucepan. Bring to the boil, then reduce to a simmer and cook for 15 minutes or until bright red and coating the back of a spoon. Strain through a sieve set over a wide bowl, and leave the resulting syrup to cool completely. 

  2. For the cocktail, put a handful of ice, the gin, 4 tablespoons of the cranberry syrup and lemon juice in a cocktail shaker. Shake until the shaker is ice-cold on the outside, then pour into chilled flute glasses. Divide the champagne (or prosecco) among the glasses and stir gently. Finish with twists of lemon peel. Freeze leftover syrup to use at another time.
