Ingredients

  • 4 tbsp lemon curd
  • 100g soft butter
  • 100g caster sugar
  • 100g self-raising flour
  • 1 tbsp milk
  • 2 large eggs
  • zest of 1 lemon

Step by step

  1. Generously butter a medium microwaveable bowl (about 1 litre capacity) and place the lemon curd in the base. Beat together the butter, sugar, self-raising flour, milk, eggs and lemon zest then spoon the mixture over the curd.
  2. ​Microwave, uncovered, for 3½-4 minutes (we cooked at 800W) until risen and cooked through. Leave to stand for 1 minute, loosen the edges with a spatula, then turn out onto a plate. Serve with dollops of crème fraîche and extra lemon curd if you like.
