No bake bites
Makes 24
In a bowl, mix 150g rolled porridge oats oats, 75g desiccated coconut, 50g dried apricots, finely chopped, and 1 x 90g pack mixed nuts, finely chopped. Add 125g smooth peanut butter, 150g clear honey and 1 tsp vanilla extract; mix well. Chill for 30 minutes, then shape into 24 balls. Roll in 4 tbsp lightly toasted sesame seeds to coat.
Keep for up to a week in the fridge. Store between sheets of baking paper in an airtight container.
