Ingredients
- 1 medium egg
- 1 tsp vanilla extract
- 50g cornflour
- 1 tsp ground mixed spice
- 30g caster sugar
- ½ tsp ground cinnamon
- 2 Pink Lady apples, cored and cut into slim wedges
- spray oil
For the blueberry sauce (optional)
- 200g frozen blueberries
- 20g caster sugar
- 10ml lemon juice
Step by step

Preheat the air fryer to 190°C. In a shallow bowl, whisk together the egg and vanilla extract. In another shallow bowl, combine the cornflour and mixed spice. In a third bowl, combine the caster sugar and the cinnamon.

Coat the apple wedges in the egg, followed by the cornflour. Skewer the apples with a fork and tap against the bowl to get rid of any excess cornflour.

Coat the air fryer basket with spray oil. Arrange the wedges in the air fryer in a single layer – depending on the air fryer size, you might need to do this in batches. Mist the apples with a little more oil. Cook for 4-5 minutes, turn them over, mist with oil again and cook for a further 5 minutes until deeply golden. Remove from the air fryer and toss in the cinnamon sugar.

If making the sauce, combine the blueberries, sugar and lemon juice in a saucepan. Simmer over a low heat until the sugar has dissolved, then increase the heat slightly and continue to cook until the blueberries have broken down and the juice has lightly thickened. Remove from the heat, cool slightly, then use a stick blender to blitz until smooth.

Serve the apple fries with the blueberry sauce for dipping, if using.
