Ingredients
- 2 x 250g blocks halloumi
- 16 rashers smoked streaky bacon
- 60g clear honey
- ½ tsp chilli flakes
- 1 tsp cider vinegar
Step by step
- Preheat the oven to 220°C, fan 200°C, gas 7. Slice the halloumi blocks horizontally in half. Cut each half into 8 to get 32 bites in total.
- Stretch the rashers of bacon with the back of a knife, then cut each rasher in half. Use to wrap each halloumi bite and place on a large lined baking tray. Bake for 10 minutes, then drain off any excess liquid. Turn each halloumi bite, then bake for a further 7-9 minutes until golden and crisp.
- Meanwhile, gently heat the honey, chilli flakes and cider vinegar in a saucepan over a very low heat for 10 minutes. Arrange the halloumi bites on a platter, drizzle over the spicy honey and serve with cocktail sticks.
