Ingredients

  • 300g natural yogurt
  • 3 garlic cloves, grated
  • 1 tbsp grated root ginger
  • 1 green chilli, finely chopped (seeds removed, if you prefer)
  • ½ x 31g pack coriander, chopped
  • 1 tsp garam masala
  • 1 tsp ground turmeric
  • ½ tsp ground paprika
  • 1 tsp tamarind paste or 1 tbsp lemon juice
  • 1kg chicken drumsticks

Step by step

Get ahead
Marinate the chicken the night before.
  1. In a bowl, mix the yogurt with the garlic, ginger, chilli, coriander, all the spices and the tamarind paste. Slash each chicken drumstick to allow the flavours to really work their way in, then turn to coat thoroughly in the marinade, massaging it in. Cover and marinate in the fridge for at least 1 hour or overnight, if possible.
  2. Preheat the oven to 200°C, fan 180°C, gas 6. Spread the chicken drumsticks out on a lined baking tray, season and bake for 45-50 minutes, or until the chicken is cooked and slightly charred. Serve hot with a fresh and crunchy salad

This is a great dish when you are entertaining as you can marinate the chicken the night before and just put it in the oven once your friends have arrived. Serve with the crunchy salad and rice, if you like
