Ingredients

  • 1 x 185g tin tuna in oil (look for the MSC logo)
  • 2 tbsp mayonnaise
  • 1 tsp capers, well rinsed and chopped
  • 1 spring onion, green part only, finely sliced
  • 1-2 tbsp brine from a jar of gherkins in sweet vinegar, to taste
  • 2 thick slices of white bread from a large loaf
  • 2 tbsp soft butter
  • cucumber slices and/or gherkin slices

Step by step

  1. Drain the tuna and mix with the mayonnaise, capers and spring onion. Add 1 tablespoon pickle brine, season with salt and freshly ground black pepper; mix. Taste and add more pickle brine or seasoning.
  2. Generously butter both slices of bread. Top one slice with the cucumber and/or gherkin slices; spoon over the tuna mixture. Sandwich with the other slice; halve and serve.
