Ingredients
- 1 x 185g tin tuna in oil (look for the MSC logo)
- 2 tbsp mayonnaise
- 1 tsp capers, well rinsed and chopped
- 1 spring onion, green part only, finely sliced
- 1-2 tbsp brine from a jar of gherkins in sweet vinegar, to taste
- 2 thick slices of white bread from a large loaf
- 2 tbsp soft butter
- cucumber slices and/or gherkin slices
Step by step
- Drain the tuna and mix with the mayonnaise, capers and spring onion. Add 1 tablespoon pickle brine, season with salt and freshly ground black pepper; mix. Taste and add more pickle brine or seasoning.
- Generously butter both slices of bread. Top one slice with the cucumber and/or gherkin slices; spoon over the tuna mixture. Sandwich with the other slice; halve and serve.
