Ingredients
- 2 heads red chicory
- 1 head cos lettuce
- 50g feta, crumbled
- 25g pistachios, roughly chopped
- 1 small red onion, thinly sliced
For the dressing
- ½ x 30g pack flat leaf parsley, finely chopped
- ½ x 30g pack coriander, finely chopped
- ½ x 20g pack dill, finely chopped
- ½ x 20g pack chives, finely chopped
- 1 shallot, finely diced
- 50ml olive oil
- 50ml Aspall Organic Apple Cyder Vinegar
- 1 tsp Dijon mustard
- a pinch chilli flakes
Step by step
- Start by adding all of the finely chopped herbs to a bowl, along with the shallot, olive oil, vinegar, mustard, chilli flakes, and seasoning to taste. Whisk together, then set aside.
- Slice off the end of the chicory and cos and separate the leaves, then arrange over a platter. Top with the crumbled feta, pistachios, and red onion. Drizzle over as much of the dressing as you like, and serve.
