Sautéed greens with golden anchovy crumbs
Salty anchovy breadcrumbs add crunch to wilted, lemony greens in this simple side dish

Ingredients
- 2 slices white bread
- 10g Sainsbury’s Anchovy Fillets (drained weight)
- 1 tbsp olive oil
- 1 garlic clove, crushed
- 1 x 500g pack Sainsbury’s Greens
- 25g unsalted butter
- juice of ½ lemon

Trim the crusts off the slices of bread and discard; cut the bread into smaller pieces, then put in a food processor and whizz to breadcrumbs. Finely chop the anchovies. Put the oil in a large frying pan with the garlic and anchovies. Set over a medium-low heat and slowly heat until the garlic and anchovies start to sizzle, then cook for a further 2 minutes, stirring to melt the anchovies. Add the breadcrumbs, increase the heat slightly and cook until the breadcrumbs turn crisp and golden, stirring regularly (about 8-10 minutes). Transfer to a plate to cool.

Meanwhile, cut out and discard the tougher stalks from the greens, then roughly slice. Melt the butter in a sauté pan or large saucepan until it starts to bubble gently. Pile in the greens, season with salt and black pepper, then cook for 6-8 minutes over a medium heat, stirring occasionally, until bright green, wilted and tender. Add the lemon juice and transfer to a serving bowl. Scatter over the crispy anchovy crumbs to serve.
