Prepare up to an hour before serving; this allows the flavours to develop.
Cut the watermelon into thin triangles about 4mm thick, discarding the skin and any black seeds as you go. Hull the strawberries and slice them thinly. Slice the cucumber thinly, too. Arrange all the slices randomly on a large platter and drizzle the gin over the top.
Finish with a small pinch of salt and pepper, toss everything together, and scatter over the shredded mint leaves.
