Ingredients

  • 1largecourgette,slicedintorounds
  • 2peppers,cutintochunks
  • 2smallredonions,cutintowedges
  • 1 tbsp olive oil
  • 3tspmildandsmokyBBQseasoning
  • 4reduced-fatporksausages(weusedPowtersSkinnyPig) - use gluten-free/dairy-free sausages, if required
  • 1x400gtinbutterbeans,rinsedanddrained
  • 1tbspbarbecuesauce(weusedSauceShopbrand)

Step by step

  1. Put your largest shallow oven tray in the oven and preheat to 220°C, fan 200°C, gas 7 while you prepare the veg. Toss the chopped courgette, peppers and red onions in a bowl with the oil, 2 teaspoons of BBQ seasoning, some salt and black pepper. Spread out on the preheated tray. Add the sausages to the same bowl and toss with the remaining 1 teaspoon of BBQ seasoning to coat. Add to the tray.
  2. Bake for 20-25 minutes, stirring halfway, until everything is cooked and lightly browned. Mix in the butter beans for the final few minutes.
  3. Stir 1 tablespoon of barbecue sauce through the traybake then serve with extra barbecue sauce, if you like.
