Ingredients
- 11⁄2 tsp olive oil
- 1 x 170g fillet steak
- 1 tsp Cajun seasoning
- 2 red onions
- 200g prepared watermelon, diced
- 1 tbsp chopped mint or parsley
- 40g feta, diced
- a squeeze of lemon juice
- about 125g shredded crisp lettuce (Romaine, Iceberg or Little Gem)
- 100g cooked brown rice
- 4 medium soft tortillas
Step by step
- Brush 1⁄2 teaspoon of oil over both sides of the steak and rub on the Cajun seasoning. Preheat a chargrill pan or frying pan on the hob. Cook the steak on a high heat for 11⁄2-2 minutes each side or until done to your liking (timing will also depend on the thickness of the steak). Remove to a plate, season with salt and cover with foil then leave to rest.
- Reserve a quarter of one onion for the salsa and cut the rest into wedges. Toss the onion wedges with 1⁄2 teaspoon of oil and some seasoning in a bowl, then chargrill or fry for about 3 minutes each side or until caramelised and tender.
- Meanwhile, finely dice the reserved red onion and combine with the watermelon, mint or parsley, feta and a squeeze of lemon juice, plus seasoning, in the bowl that you used for the onion wedges. Mix the lettuce with a squeeze of lemon and 1⁄2 teaspoon of oil in another bowl. Heat the rice through, if not freshly cooked.
- Briefly warm the tortillas following pack instructions to soften and slice the steak. To serve, add some of the dressed lettuce to a tortilla, followed by a spoonful of rice. Tuck in some caramelised onions and steak and spoon in the salsa. Wrap up and enjoy.
Tip
If you don’t have any Cajun seasoning, try using a pinch each of whichever of the following that you have available: chilli powder, garlic granules or onion powder, thyme or oregano, smoked paprika, ground cumin or coriander.
