Ingredients

  • ½ tbsp sesame seeds
  • 1 tsp poppy seeds
  • ½ tsp garlic granules
  • ½ tsp sea salt flakes
  • 2 tbsp olive oil, plus extra to grease
  • 1 onion, finely sliced
  • 2 garlic cloves, finely sliced
  • 100g baby spinach
  • 1 x 212g tin wild Pacific red salmon, drained
  • 2 plain bagels, cut into bite-sized pieces
  • 100g baby plum tomatoes, halved
  • 6 medium eggs
  • 200ml whole milk
  • 100ml double cream
  • 1 tsp Dijon mustard
  • 100g cream cheese
  • salad leaves, to serve

Step by step

  1. Preheat the oven to 180°C, fan 160°C, gas 4. Grease a 25cm x 17cm oven dish. For the ‘everything’ seasoning, combine the sesame seeds, poppy seeds, garlic granules and sea salt in a small bowl, then set aside.
  2. Heat the oil in a frying pan over a medium heat, then sauté the onion with a pinch of salt for 3-4 minutes, until softened. Add the garlic and cook for 30 seconds before adding the spinach; cook until wilted. Remove any obvious bones from the salmon and flake into the spinach mixture. Stir to combine and season well with some black pepper and a little salt.
  3. Transfer the salmon mixture to the greased oven dish and nestle in the bagel pieces and tomatoes. Whisk the eggs, milk, cream and mustard in a jug or bowl with 1 teaspoon of the ‘everything’ seasoning and some black pepper. Pour over the contents of the oven dish. Dot with the cream cheese and sprinkle with the remaining ‘everything’ seasoning. Transfer to the oven and bake for 30-35 minutes or until the centre is set and the edges are golden brown. Remove from the oven and leave to cool for 10 minutes before serving. Serve with salad leaves.
