Ingredients

  • 1 tbsp olive oil
  • 1 large red onion, finely chopped
  • 1 large red pepper, finely chopped
  • 1 x 500g pack 5% fat beef mince
  • 1 tbsp chipotle paste
  • 120g lighter mature cheese, grated
  • 1 x 320g pack 8 flour tortillas
  • juice of 1 lime
  • handful coriander, roughly chopped
  • 150g low-fat natural yogurt

Step by step

  1. Heat the oil in a large frying pan; fry the onion and red pepper for 5 minutes, or until starting to soften. Add the mince and cook for a further 4-5 minutes, stirring to break it up, until the mince has browned all over. Add the chipotle paste and cook for another 2-3 minutes until the vegetables are soft and the meat is cooked through. Season then tip into a bowl and set aside; wipe out the pan with kitchen paper.
  2. Divide half of the cheese between 4 of the tortillas and then top each with a quarter of the beef mix. Sprinkle the remaining cheese over the top of each and sandwich with another tortilla. Heat the frying pan over a medium heat and then cook 1 quesadilla for 2-3 minutes on each side, until crisp and golden and the cheese is melted inside. Keep warm while you cook the remainder.
  3. Stir the lime juice, coriander and a pinch of salt through the yogurt. Cut each quesadilla into quarters and serve with the sauce to dip.
