Ingredients

For the pineapple salsa
  • zest and juice of 1 lime
  • ½ ripe small pineapple, finely diced
  • ½ tsp caster sugar
  • 1 red chilli, deseeded and finely chopped or sliced
  • ½ small red onion, finely chopped
  • 2 tbsp chopped coriander
  • a pinch of sea salt
For the cauliflower steaks
  • 1 large cauliflower
  • 1 tbsp Cajun seasoning
  • ½ tsp smoked paprika
  • 1 tsp garlic granules
  • 1 tbsp vegetable oil, plus extra yo drizzle (if needed)
To serve
  • ½ lime, cut into wedges

Step by step

  1. Make the salsa. Reserve half the lime zest for the cauliflower, then mix the rest with the other salsa ingredients. Set aside to infuse.
  2. Cut 2 x 3cm thick cauliflower steaks, from the middle part where the cauliflower is at its thickest and attached to the core. 
  3. Mix together the Cajun seasoning, reserved lime zest, smoked paprika, garlic granules and some seasoning until well combined. Rub the oil over the steaks, then sprinkle evenly with the spice mix.
  4. Preheat an outdoor barbecue or a griddle pan over a high heat.
  5. Place the steaks on the grill and cook for 4-5 minutes on each side or until slightly softened and evenly charred. If you’re using a griddle pan, drizzle the pan with a little oil before cooking.
  6. Serve the cauliflower steaks topped with the pineapple salsa, accompanied by a wedge of lime to squeeze over.
