Ingredients

  • 1 lemon
  • 2 blood oranges
  • 50g root ginger, sliced
  • 2 or 3 sprigs of thyme
  • 4 mint sprigs
  • ice cubes for serving
  • 1 litre chilled sparkling water
  • elderflower cordial, optional

Step by step

  1. Pare the zest from half the lemon and one orange, and put in a serving jug. Juice these fruit, and thinly slice the remaining lemon and the other orange. Add to the jug with the ginger and herb sprigs. Infuse for at least 30 minutes.
  2. To serve, add the ice cubes and sparkling water. If you like it a little sweeter, stir in a couple of glugs of elderflower cordial.
