Ingredients

  • 1 tsp ground turmeric
  • ½ tsp cayenne pepper
  • 15g grated root ginger
  • 2 lemons, scrubbed
  • 50g light brown sugar
To serve
  • ice cubes and sparkling water for a cold tonic
  • honey, agave syrup or sugar for a hot toddy
  • extra lemon to garnish

Step by step

  1. Combine the turmeric, cayenne and ginger in a small-medium pan. Pare in the zest from the lemons using a veg peeler, then squeeze in the juice and mix to a paste.
  2. Add the sugar and 300ml water and bring to a gentle simmer. Remove from the heat, cover and leave to cool; strain and store in a sterilised bottle or jar in the fridge.
  3. Measure out 50ml of the tonic for each serving. For a refreshing aperitif, pour over ice cubes in a tall glass then top up with sparkling water. For a hot toddy, add to a heatproof mug and top up with boiling water; sweeten with honey, syrup or sugar to taste. Garnish with lemon slices or twists of peel
