Ingredients

  • sea salt flakes
  • ice
  • 100ml tequila blanco
  • 25ml agave nectar (or runny honey if not vegan)
  • 20ml lime juice (you'll need 1 lime)
  • 150ml pink grapefruit juice
  • 150ml ginger beer*
To garnish
  • small wedges of fresh pink or red grapefruit

Step by step

  1. For salt-rimmed glasses, spread some sea salt flakes across a small plate. Dip the rims of two highball glasses in a bowl of cold water, then shake off the excess and dip into the salt to lightly coat the rims; set aside. 

  2. Fill a cocktail shaker with ice, then pour in the tequila, agave nectar lime juice and pink grapefruit juice. Shake well until the outside of the cocktail shaker is very cold. 

  3. Strain into the prepared glasses, add a small handful of ice to each and top up each glass with 75ml ginger beer, Garnish with small wedges of fresh pink or red grapefruit, if liked. 

    *Check your ginger beer is gluten-free, if required.
