A wonderful breakfast to wake up to, you could swap mincemeat for cranberry sauce and figs for orange zest for an alternative flavour combo

Ingredients

  • 100g gluten-free oats
  • 1 tsp gluten-free baking powder
  • ½ tsp ground cinnamon, plus a pinch to dust
  • 2 medium eggs
  • 2 tbsp maple syrup
  • 100ml milk
  • 75g dried figs, roughly chopped
  • 3 tbsp mincemeat*
  • 4 tbsp Greek yogurt, to serve

Step by step

  1. Preheat the oven to 180°C, fan 160°C, gas 4 and grease two small baking dishes or large ramekins. Blitz the oats in a blender until they are flour-like, then add the baking powder, cinnamon, eggs, maple syrup and milk. Blitz again until combined.
  2. Stir through the figs and 2 tablespoons of the mincemeat. Divide the mixture between the dishes, then dot the tops with the remaining tablespoon of mincemeat. Bake in the oven for 25 minutes, or until slightly risen and golden. Serve warm with a dollop of Greek yogurt on top and a dusting of cinnamon. *Check your mincemeat is vegetarian and/or gluten-free, if required.
