Ingredients
- 1kg chicken drumsticks
- 1 tbsp olive oil
For the buffalo glaze
- 1 tsp smoked or regular paprika
- 1 tbsp Worcestershire sauce
- 75ml Frank's hot sauce, or other chilli sauce
- 2 tbsp clear honey
For the blue cheese dip
- 100ml soured cream or crème fraîche
- 50g blue cheese, crumbled
- 2 tsp white wine vinegar
Step by step
Get ahead
Make the buffalo glaze and blue cheese dip a few hours ahead.
- Make 3 deep cuts in each chicken drumstick to help it cook faster. Place in a bowl and toss with the olive oil and some salt and pepper. Heat a barbecue or preheat the oven to 220°C, fan 200°C, gas 7. Cook the chicken drumsticks for 25 minutes or until they are cooked through, turning occasionally (on a roasting tray if in the oven).
- While the chicken is cooking, mix the buffalo glaze ingredients together with some seasoning in a small bowl. Mix the blue cheese dip ingredients in another small bowl, and add some salt and pepper.
- Brush the chicken with half the buffalo glaze, and if using the oven turn it up to 240°C, fan 220°C, gas 9. Continue cooking the chicken for 10 minutes or until the skin is crispy and the meat pulls back from the knuckle. Serve the chicken with the remaining glaze and blue cheese dip.
