Get your sweet-treat fix in just 20 minutes – and without even turning the oven on – with these “uncookies”, so called because they don’t require any cooking. With an oaty nut butter base, they make a healthier, energy-boosting grab-and-go bite. Choose one of my flavour combos – funfetti, Smarties or triple-choc chip – or make a batch of each one for a party spread

Ingredients

For the base, for each flavour variation
  • 100g rolled or porridge oats
  • 30g milled flaxseeds
  • 75ml maple or agave syrup, or honey
For funfetti (makes 10)
  • 75g almond butter
  • 2 tsp lemon juice
  • 1 tbsp freeze-dried raspberries
  • 20g cake decorating sprinkles
For Smarties (makes 13)
  • 100g smooth peanut butter
  • 75g Smarties, roughly chopped
For triple-choc chip (makes 14)
  • 3 tbsp cocoa powder
  • 100g cashew butter
  • 75g mixed dark and white chocolate chips
  • 1 tsp vanilla bean paste

Step by step

How to store
Store the uncookies in an airtight container in the fridge for up to 1 week, or freeze for up to 1 month.
  1. Combine the oats and flaxseeds in a mixing bowl with a pinch of salt.
  2. Next, add the syrup or honey, followed by the remaining ingredients for your chosen flavour. Mix well to combine; leave to rest for 5 minutes.
  3. Scoop the mixture into roughly 30g portions then roll each one into a ball with damp hands (this helps stop them from being too sticky). The uncookies are ready to eat straight away, or see our tip above for storage instructions.

    Use gluten-free oats and check that any sprinkles (or other additions) are vegetarian, if required.
