Santa hat brownie bites

These cute Santa hat chocolate bites can be made with your favourite brownie recipe (or shop-bought brownies – we won’t tell a soul…)

Ingredients

  • 25g soft butter
  • 75g full fat soft cheese
  • 25g icing sugar
  • 1 x 20cm square brownie (use a brownie mix or your own recipe)
  • 20g desiccated coconut
  • 18-20 medium strawberries, stalk ends sliced off

Step by step

  1. In a mixing bowl, beat the butter until very soft, then beat in the soft cheese and icing sugar. Spoon into a piping bag.
  2. Using a 4cm round cutter, cut 18-20 circles from the brownie.
  3. Place the brownie bites on a board or serving platter. Pipe a thick ring of the icing around the edge of each brownie bite. Scatter over a little coconut, turn upside down to remove the excess, and then place a strawberry on top, point up.
  4. Finish the tip of each strawberry with a dot of the icing to finish off the Santa hat.
