MEET AKTAR

Aktar Islam is chef owner of Birmingham’s two-Michelin-starred restaurant Opheem. He has recently opened Oudh 1722 in London, a restaurant celebrating the culinary heritage of Lucknow, a historic city in northern India. 

For acclaimed Michelin-starred chef Aktar Islam, korma is more than a curry – it’s a celebratory dish rooted in family, tradition and India’s regal culinary history. At Oudh 1722, we have a korma on the menu, but interestingly, it’s in the kebab section. A lot of what we’d traditionally class as curries in local cuisine are still classed as kebabs because they’re marinated and kissed over fire.
