Ingredients

  • 1 x 28g pack mint
  • 2 tbsp caster sugar
  • 125ml distilled (white) malt vinegar
  • ½ tsp fine sea salt
  • 1 large or 2 small shallots, very finely chopped

Step by step

Get ahead
Make up to 2 days before and store in the fridge.
  1. Strip or pick the mint leaves and discard the woody stems. Finely chop the leaves, using a rocking motion, holding the top of the knife. (Your kitchen will smell like spring itself!)
  2. Tip into a bowl with the remaining ingredients. Leave to stand for 30 minutes to infuse and to let the sugar dissolve before serving.
