Ingredients

  • 1 sweet gem lettuce
  • 4 spring onions
  • ½ x 20g pack chives
  • 1 medium-large courgette
  • plain tortilla chips, optional, to serve
For the dressing
  • juice of 2 lemons
  • 60ml olive oil
  • 2 tbsp white wine vinegar
  • 2 garlic cloves, chopped
  • 1 echalion shallot, chopped
  • ½ x 20g pack chives, chopped
  • 1 x 30g pack basil, leaves picked
  • 50g young spinach
  • 40g unsalted cashews
  • 15g nutritional yeast flakes
  • 1 tsp fine sea salt

Best on the day of making, but will keep in the fridge for 1-2 days if the salad and dressing are stored separately.
  1. Add all of the dressing ingredients to a powerful blender or food processor. Blend until smooth.
  2. Finely chop the lettuce, spring onions and chives. Coarsely grate the courgette and toss everything together in a large bowl.
  3. Add the dressing to the salad, stir well until coated and enjoy as a side, or with tortilla chips.
    What is nutritional yeast?
    Available in flakes, nutritional yeast is the same strain of yeast used to make bread, but it’s deactivated in production – don’t try and substitute with regular yeast! It adds a nutty, cheesy flavour to recipes, and is often used in place of Parmesan in vegan dishes.
