Ingredients

  • 1tbspoliveoil
  • 1x320gpackskinlessandbonelesschickenthighfillets
  • 200gTenderstembroccoli
  • 1tbspbalsamicvinegar
  • 1tbspclearhoney
  • ½tspdriedrosemary
  • 1x250gpackpre-cookedgrains(weusedMerchantGourmetGloriousGrains)
  • 60gwildrocket
  • 100gredgrapes,halvedifyoulike

Step by step

  1. Preheat the oven to 220°C, fan 200°C, gas 7. Heat half the oil in a frying pan and cook the chicken for 5 minutes, turning, until golden all over. Transfer to a roasting tray and add the broccoli.
  2. Add the remaining oil to the pan with the balsamic, honey and rosemary and mix into the pan juices. Drizzle the mixture over the chicken and broccoli, using a silicone spatula to get every last drop, and season well.
  3. Transfer to a high shelf in the oven and roast for 15-18 minutes, until the chicken is cooked through.
  4. Meanwhile, heat the grains to pack instructions, then toss together with the rocket. Season well. Divide this between two shallow bowls, then top with the grapes, roasted chicken and broccoli. Spoon over any roasting juices to serve.
