A hearty salad packed with flavour from grapes and feta. You can also use halloumi if you would like

Ingredients

  • 90g quinoa
  • 100g frozen peas
  • 1½ tbsp lemon juice
  • 3 tbsp walnut or hazelnut oil
  • 50g watercress, coarsely chopped
  • 100g seedless red grapes, halved
  • 1 spring onion, trimmed and finely sliced
  • 60g feta, coarsely crumbled or 60g halloumi, cut into slices and griddled

Step by step

  1. Bring a pan of salted water to the boil, add the quinoa and simmer for about 15 minutes or until tender, adding the peas for the last 2-3 minutes. Drain and rinse in cold water, then leave to cool completely.
  2. Whisk the lemon juice, oil and some seasoning together. Combine the watercress in a bowl with the grapes, spring onion and quinoa mixture. Shortly before serving, toss with the dressing, then gently mix in the feta or halloumi.
