Chipotle pork belly and apple tacos
These autumnal tacos feature apples two ways – caramelised in the air fryer with the spiced pork belly and fresh in a zingy cabbage slaw

Ingredients
- 160-200g pork belly slices, cut into small chunks
- 1 tbsp chipotle paste
- 2 tsp Mexican-style seasoning (we used fajita seasoning)
- 2 apples
- 100g 0% fat strained Greek yogurt
- ½ x 30g pack coriander, leaves picked, plus extra to serve
- 2 tbsp cider vinegar
- ½ avocado, peeled and stoned
- ¼ small white cabbage, shredded
- 4 small corn tortillas
Step by step

Put the pork belly chunks in a bowl and combine with the chipotle paste and Mexican-style seasoning. Tip into the basket of the air fryer and cook at 180°C for 15 minutes. Meanwhile, peel and cut one of the apples into cubes, then add to the air fryer for the final 5 minutes. If the pork is already looking dark when you add the apples, reduce the temperature of the air fryer slightly. The pork should be soft with charred, crispy edges.

Meanwhile, put the yogurt, coriander leaves, 1 tablespoon of vinegar and the avocado in a blender and season with salt and pepper. Blend until smooth, then set aside. For the slaw, put the cabbage in a medium bowl. Core and finely slice the remaining apple into matchsticks, then add to the cabbage with the remaining vinegar. Season and mix well.

Warm the tortillas in the air fryer for a couple of minutes, then build the tacos. Add a dollop of the avocado yogurt to each tortilla, then top with the slaw, pork belly and apples. Scatter with a few extra coriander leaves.
