Ingredients

  • 100g lemon curd
  • juice and grated zest of ½ lemon
  • 4 oaty biscuits
  • 8 mini meringues
  • 1 x 500ml (450g) tub vanilla ice cream
  • 2 tbsp limoncello

Step by step

  1. Combine the lemon curd and lemon juice in a bowl. Break up the oaty biscuits and 4 of the meringues into rough pieces.
  2. Place half the biscuit and meringue pieces into the bottom of 4 tall glasses and add a scoop of vanilla ice cream to each one. Spoon in some of the lemon curd sauce, then repeat the layers.
  3. Drizzle ½ tablespoon limoncello into each glass, scatter with lemon zest and top with a meringue. Serve immediately.
