Ingredients
- 1tsp good-quality mayonnaise
- 50ml gin (we used Plymouth)
- 25ml extra-dry vermouth
- 1tsp lemon juice
- small pinch of salt
- few cubes of ice (not too much to avoid over-diluting)
To serve
- twist of lemon peel
Step by step
- Transfer a small martini glass to the freezer to thoroughly chill.
- Add the mayonnaisse, gin, vermouth, lemon juice and a small pinch of salt to a cocktail shaker. Stir together briefly, then add a few cubes of ice. Shake well for 15 seconds, until the shaker is very cold, to emulsify the mayo.
- Double strain into the chilled martini glass and decorate with a twist of lemon peel.
