Ingredients
- 75g self-raising flour
- 50g caster sugar
- ¼ tsp ground cinnamon
- 45g butter, melted
- 1 tsp vanilla extract
- 1 large egg
- 50g cooking apple, peeled and diced
- 2 tsp caramel sauce, plus extra to serve
- 2 tbsp crème fraîche, to serve
Step by step
- Sift the flour into a bowl; stir in the caster sugar and ground cinnamon. Mix the melted butter with the vanilla extract and egg in a jug with a fork.
- Pour into the dry ingredients; mix until smooth. Fold in the cooking apple. Put a tsp of caramel sauce into two microwavable mugs, then divide the batter between them (it should half-fill each mug).
- Microwave on high for 2 minutes, then leave for 5 minutes. Top with a tablespoon of crème fraîche, and more caramel sauce.
