Preheat the oven to 180°C, fan 160°C, gas 4. Remove any damaged outer leaves from your cauliflower, then put it in a large saucepan filled with boiling water. Cook for 10 minutes. Drain well. In a bowl, mix together 3 tbsp oil, 1 tsp curry powder, 1 tsp chilli flakes and a pinch of Maldon Sea Salt Flakes. Rub this over the cauliflower and place in a roasting tin. Bake for 20 minutes. Sprinkle the cooked cauliflower with a handful of flaked toasted almonds, pomegranate seeds, chopped dried apricots and a drizzle of tahini. Add a pinch of Maldon salt to bring all the flavours together.
