Chef Monica Galetti is the owner of award-winning restaurant Mere, as well asa judge on MasterChef: The Professionals. We put her through her paces with the big foodie questions of the day

1. Takeaway or fakeaway?

Fakeaway. We’ll make our own wraps or pizza. My daughter loves a mix of meats on top; I love aubergine and anchovy.

2. What’s your signature dish?

At the restaurant, it’s the chocolate Hokey Pokey dessert; at home, I’d say my rhubarb crème brulée.

3. What’s your favourite cookbook?

My all-time favourites are Alain Ducasse’s pastry books.

4. Starter or dessert?

Starter for sure – my favourite is seafood.

5. What’s your last supper dish?

A massive seafood platter with Champagne, followed by a dense, rich chocolate cake.

6. My favourite ingredient to cook with is...

pasta. And my favourite sauce would be tomato anchovy.

7. Any kitchen disasters to share?

Recently, the motor to my extractor fan blew and then an hour later the kitchen flooded. I was in the middle of service!

8. What’s your guilty food pleasure?

Marmite with lashings of butter.

9. Which food trend would you like to see the back of?

Pearls... people turn everything into pearls!

10. Pineapple on pizza. Yes or no?

Only if it’s going to upset my head chef! He’s Italian and he makes pizza once a month for the whole team. Every now and then, someone will sneak pineapple on!
