Moist fruit cake topped with sweet, pastel-yellow marzipan, Simnel cake is the ultimate Easter treat. Traditionally made for Mothering Sunday, halfway through Lent, Simnel cake is usually decorated with marzipan balls to represent the apostles. Listening to Mary Berry describe her recipe on Radio 4's Women's Hour took me straight back to my childhood when we'd always have something similar. Mary's recipe really is one of the best – happy baking!
