How to plate up smoked salmon

1. Layer the smoked salmon in an overlapping circle
2. Arrange the fennel in the centre using a small cookie cutter
3. Odd numbers work best for garnishing: try adding five points of guacamole
4. Garnish with fresh pea shoots and coriander cress
