French goats' cheese on mushrooms
Serves 4 | prep 5 mins | total time
- 4 portobello mushrooms
- 4 x 60g slices French goats' cheese log
- 6 sprigs thyme, torn
- 1 x 75g pack watercress
- 1 tbsp olive oil
- Preheat the oven to 200°C, fan 180°C, gas 6. Place the mushrooms onto a baking tray and top with a few thyme leaves. Season with salt and pepper then place the French goats' cheese slices onto each mushroom. Cook in the oven for 15-20 minutes, topping with a few thyme sprigs for the last 3-4 minutes.
- Serve with the watercress leaves and a little olive oil and freshly ground black pepper.
