Cheesy tortelloni skewers

Ever so tasty, this is one of the easiest starters to make. You can mix up the flavour of the tortelloni or the meats and cheese to suit what you have.

Ingredients

  • 3 tbsp extra-virgin olive oil
  • 12 fresh sage leaves
  • 1 tbsp white wine vinegar
  • 1 tsp honey
  • zest of 1 lemon
  • 1 x 300g pack ham and cheese tortelloni
  • 1 x 130g pack mortadella, cut into wide strips
  • 15g toasted pine nuts
  • 20g Pecorino Romano or Parmesan, grated
You'll also need
  • 6 wooden skewers

Step by step

  1. Heat 1 tablespoon of the oil in a frying pan and fry the sage leaves until crispy. Whisk together the remaining oil, vinegar, honey and lemon zest and add to the pan. Keep warm.
  2. Bring a pan of salted water to the boil and cook the tortelloni for 2 minutes. Drain and leave until cool enough to handle. Thread the tortelloni onto the skewers, alternating with the mortadella, folded into ribbons.
  3. Place on a serving plate and then drizzle over the warm sage dressing and scatter with the pine nuts and cheese. Serve immediately.
