Ingredients

  • 1 Knorr Vegetable Stock Pot
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 1 garlic clove, crushed
  • 1 stick lemongrass, bashed
  • 1 medium sweet potato, peeled and chopped into small chunks
  • 2 lime leaves
  • 1 x 400ml tin coconut milk
  • lime wedges, sliced chilli and coriander to serve

Step by step

  1. Heat the oil in a saucepan, then gently cook the onion, garlic, chilli and lemongrass for 5 minutes until soft and fragrant.
  2. Mix in the sweet potato, lime leaves, the Knorr Vegetable Stock Pot, 450ml water and the coconut milk (see ‘Tip’, below), bring to the boil and cover.
  3. Simmer for 10 minutes or until the potatoes are soft. Discard the lemongrass and lime leaves. Blend the soup until smooth.
  4. Finish with a squeeze of lime and garnish with thinly sliced red chilli and coriander.
    Tip
    Reserve a little of the thick coconut cream from the top of the tin of coconut milk to swirl on top of the soup to level up your meal.
